Mimi & Mae’s Mexican Rice

  • Sauté red & green bell peppers and onions in oil
  • Add 1/2lb of ground beef and cook. Drain fat. Season with salt and pepper.
  • Add 1 can Mild Rotel Tomatoes & using the empty can, add 1.5 cans of water.
  • Add 1/2 to 1 package of Taco Seasoning
  • Add 1/2 can drained and rinsed black beans, 1/2 small can of corn, and 1/2 small can drained black olives.
  • Add 1/2 cup of rice or quinoa
  • Bring to a boil. Reduce heat. Simmer 30 minutes until water is absorbed.

Taco Mac

Ingredients:

Taco Seasoning, homemade, or we often use this.
1 lb. ground beef
12 oz. gluten free pasta (this is my favorite brand)
14.5 oz. can fire roasted tomatoes
2 cups chicken broth
Mexican Cheese blend, if you eat dairy

Directions:

1. Brown Ground beef, seasoning with taco seasoning and salt & pepper.
2. Add pasta, the whole can of fire roasted tomatoes, and the chicken broth.
3. Bring to boiling, then turn heat down to medium low and cover. Stir every few minutes and let simmer until pasta is done. Taste and add spices if needed. Stir in some cheese, or serve in bowls and top it with cheese.

Wild Rice Bowls

This isn’t really a recipe, its just a quick meal and a good way to use up vegetables in the fridge…

1 box Wild Rice, cooked in a rice cooker.
1 lb Ground Beef, browned
Salt & Pepper
Chopped Vegetables: zucchini, yellow squash, carrots, onions, garlic, spinach, etc.

Start the rice in the rice cooker. Then, cut up whatever vegetables you have on hand. Cut them pretty small and all about the same size. Sauté the vegetables until softened and then take them out of the pan and set aside. (Some take longer than others, so for example start onions and carrots before adding in the zucchini).

Brown the ground beef, seasoning with salt and pepper. When the rice is done add the vegetables and rice back into the pan with the ground beef and stir everything together. If adding spinach, chop it up and then stir it in at the very end. The heat will wilt it.

The wild rice has a lot of flavor, so I don’t usually add much else, but if you want more flavor, add any spices that sound good. The main thing is to get the salt right for the ground beef.

Hamburger Helper

This is a quick take on the boxed Hamburger Helper I grew up eating.

1 lb. Ground Beef
1 jar Spaghetti Sauce
Salt & Pepper
Chili Powder
Smoky Paprika
Cayenne Pepper (will get spicy in a hurry)
Pinch of Sugar
Elbow Macaroni
Optional: Cheddar Cheese

Start by boiling some elbow macaroni. Meanwhile, brown the ground beef in a pan. Add spaghetti sauce and spices. Once the noodles are done, mix them in. Stir in cheese. then serve in bowls.

Sloppy Joe’s

1 lb Ground Beef
1/2 of an Onion diced
1 tsp Garlic Powder
1 tsp Cumin
2 tsp Paprika
1/4 tsp Cayenne Pepper
Salt to taste
1 cup Ketchup
1/2 cup Water
2 Tbsp vinegar
2 Tbsp Brown Sugar

Saute onions in olive oil. Add ground beef. Once it starts to brown add garlic powder, cumin, paprika, cayenne, and salt. Let the beef finish cooking. Then add ketchup, water, and brown sugar. Stir and simmer about 10 minutes until thickened. Serve on toasted buns.

BBQ Meatballs (from my childhood)

Meatballs:

  • 1 lb ground beef
  • 1/4 cup oats
  • 1/2 cup milk
  • 1 egg
  • 1 tsp salt

Sauce:

  • 1 Tbsp Worcester sauce
  • 1/2 Tbsp vinegar
  • 1 Tbsp sugar
  • 1/2 cup Ketshup
  • 1/3 cup water.

Directions:

Mix ingredients for meat balls, shape in balls and brown. Drain on paper towels and wipe grease from skillet. Return meatballs to skillet. Mix sauce ingredients and pour over meatballs.

Simmer for a few minutes. My mom served over rice…But any sides you like would work.

Enchilada Skillet

Ingredients:

  • 2 tsp olive oil
  • 1 yellow onion, diced
  • 1 lb ground beef
  • 1 medium yellow squash, chopped
  • 1 medium zucchini, chopped
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 pepper
  • 1/2 cup corn kernels
  • 1 cup black beans, rinsed well if using canned
  • 4 corn tortillas, sliced into strips
  • 12 ounces enchilada sauce
  • 1/2 cup grated mozzarella or colby jack
  • fresh cilantro, or green onions garnish

Instructions:

  1. Heat oil in large skillet on medium; add onion & beef. Saute until meat is almost done, then add both squash – cook another 4-5 minutes.
  2. Add spices, fresh corn, beans, tortilla strips, and enchilada sauce. While gently stirring, let heat to a nice bubbly consistency – about 4 more minutes.
  3. Top with cheese & cilantro/green onions if desired.

Italian Meatballs

1lb ground beef
2 slices of bread (torn in little pieces) or oatmeal
2 eggs
1/2 cup water
1tsp salt
1/2 tsp italian seasoning
1/8 tsp pepper
2tsp worstershire sauce
1/4 tsp garlic powder
1/2 cup parmesean cheese

mix all ingredients together, roll into balls and cook on a stove, once fully cooked, pour spaghetti sauce over the top and let it heat up on the stove. Is best with some spinach casserole..

Lori Davis’ Goulash

So this is one of those recipes that i don’t have an exact recipe for but it is super easy and really good:

Here are the ingredients:

hamburger meat
onions
green peppers
shell noodles
jar of spaghetti sauce
corn
grated cheese

Basically you brown and drain the ground beef and sautée the onions and peppers. Then add the spaghetti sauce to the meat and leave on the stove to heat up the sauce. Meanwhile cook the pasta and drain the water off. Then add the pasta, corn, and cheese to the meat mixture and stir it all together.

Meatloaf

To 1 lb. ground beef add:
1 egg
1 tsp. salt
1/4 tsp. garlic
1/4 tsp. onion powder
1 slices of bread toasted and crumbled
approx. 1/2 cup of milk (add slowly and add more if needed)

Mix well with a fork. Place in a baking dish and shape into a loaf. Bake at 400 degrees for an hour.

Homemade Lasagna II


2 lb. ground beef
Onion
1 ½ tsp. garlic
2 tsp. salt
1 lb. tomatoes
3 cans tomato paste
16 oz. ricotta cheese
¼ cup Parmesan cheese
2 tsp. parsley
2 beaten eggs
1 tsp salt
1 ½ tsp pepper
8 oz. shredded Mozzarella cheese
8 lasagna noodles, cooked

Boil noodles, drain. In a large skillet brown ground beef and onions, drain. Add tomatoes, tomato paste, garlic, basil, and salt. Simmer 15-20 minutes. In a mixing bowl, mix ricotta cheese, Parmesan cheese, parsley, eggs, salt, and pepper.
In a 9×13 pan spoon a little meat sauce on the bottom. Then layer half the noodles, then half the cheese mixture, the half the meat mixture. Repeat. Bake at 400 degrees for 30-45 minutes until heated throughout.

Mexican Hamburger Rice Skillet

1 lb. ground beef
Onion
Bell pepper
1 package taco seasoning
1 can Rotel
1 ½ cups water
1 cup uncooked rice
½ tsp. salt

Brown ground beef, onion, and bell pepper in a skillet. Drain. Add taco seasoning, Rotel, water, rice, and salt. Bring to a boil, reduced heat, cover and simmer until rice is done.
Garnish with lettuce, green onions, tomato, olives, sour cream, cheese, and tortilla chips.

Dirty Rice

1 lb ground beef
2 garlic cloves
2 celery ribs
1 medium onion
1 Tbsp. parsley
1 green bell pepper
¼ tsp. red pepper
1/4 tsp. black pepper
1 Tbsp. Worsterchire sauce
1 cup uncooked rice
1 can beef broth
¾ cup water

In a skillet saute ground beef, garilc, celery, onion, and bell pepper until meat is brown. Drain. Add parsley, salt, pepper, Worsterchire sauce, rice, beef broth, and water. Bring to a boil, reduce heat and cover. Summer until rice is done.

Chili

1 lb. ground beef
Chopped onion and green pepper
6 oz. can tomato paste
2 cups tomato juice
1 tsp. garlic
2 tsp. chili powder
1 tsp. sugar
1 tsp. salt
¼ tsp. pepper
1 tsp. cumin
1 tsp. Italian seasonings
Dash Cayenne

Brown and drain onion and pepper. Add all ingredients and simmer

Hamburger Strogganoff

1 lb ground beef
Onion
3 beef bullion cubes
½ tsp. salt
1 cup hot water
2 Tbsp. Ketchup
1 tsp. mustard
2 Tbsp flour
½ cup cold water
½ cup sour cream
Cooked noodles

Brown and drain ground beef. Add salt, bullion cubes, water, Ketchup, and mustard. Simmer a few minutes. Raise heat and stir in flour mixture (flour and ½ cup cold water) until thickens. Remove from heat. Stir in sour cream, then noodles. Serve.

Beef and Macaroni Casserole

1 lb. ground beef
½ cup Onion, chopped
½ cup Green bell pepper, chopped
4 Tbsp. Flour
1 tsp. salt
1 tsp. Italian seasoning
¼ tsp pepper
8 oz. macaroni, cooked
4 oz. Cheddar cheese, shredded
28 oz. can chopped tomatoes

Brown onions, peppers, and ground beef in a little oil. Drain. Add tomatoes and spices. Cook until juice thickens. Cook elbow macaroni. Drain. Add to sauce. Pour into a casserole dish. Sprinkle cheese on top. Bake at 375 degrees until cheese is melted and pasta is heated through.

Pepperjack Meatloaf

1 egg
1 cup seasoned bread crumbs
1 small onion, diced
1/2 tsp salt
1 tsp pepper
1 1/2 lb ground beef
4 oz pepperjack cheese, divided

In a large bowl, combine all but meat and cheese. Crumble beef over mixture and mix well. Press 1/2 of the beef mixture into bottom and halfway up sides of greased 8x4x2. Sprinkle 3/4 cup of cheese over meat to within 1/2 inch of sides. Pat remaining beef mixture over cheese. Bake, uncovered, at 350 degrees for 50-55 min. Sprinkle with remaining cheese. Bake 5 min. longer or till cheese is melted. Let stand for 10 min. Drain off any grease from pan.

Bubble Pizza

1 Can of Pillsbury biscuits
1 ½ lb ground beef, browned and drained
Spaghetti sauce
Italian seasonings
Garlic

Cut biscuits up into pieces. Place in bottom of a greased baking pan. Cook ground beef and drain, add spaghetti sauce, Italian seasonings and garlic. Heat and let simmer for about 5 minutes. Pour meat sauce on top of biscuits. Cook on 400 degrees for about 15 to 20 minutes. Top with shredded cheese.

Party Meat Balls

2 lb. ground beef
1 cup sweet milk
3 tsp. salt
1 tsp. pepper
2 small onions, finely chopped
2 cups bread crumbs
Sauce:
3 ¾ cup Ketchup
9 Tbsp. dry onions
3 Tbsp. sugar
3 Tbsp. hot sauce

Mix first 6 ingredients together. Make into balls. Cook about 20 minutes, until brown. Let cool. Mix remaining ingredients for sauce and pour over meatballs. Cook on low for about 30 minutes.
