When cooking pasta for this meal, reserve two cups of pasta water for the sauce.
Ingredients:
- 2 cups reserved pasta water
- 4 Tbsp. Butter
- 4 Tbsp. Flour
- 2 cups Heavy Cream
- 1 tsp. Salt
- 1 cup freshly grated Parmesan Cheese
- freshly ground Pepper to taste
- 14 cup fresh Parsley
- 1 Tbsp. Lemon Juice
Directions:
- Melt butter in a pan.
- Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1-2 minutes.
- Whisk in the reserved two cups of pasta water and the heavy cream.
- Season with 1 tsp. salt and the ground pepper.
- Return to a simmer, whisking to make a smooth sauce.
- Cook over low heat until thickened.
- Remove the pot from heat and add the parmesan cheese, parsley, and lemon juice. Stir.
