Maple-Cinnamon Roasted Yams

  • 2 large sweet potatoes/yams, peeled and cut into 1-inch cubes or wedges
  • 2 tbsp EVOO
  • 2 tbsp Maple Syrup
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • ½ tsp Salt
  • Black Pepper to taste
  • Optional garnish: chopped pecans or pumpkin seeds, or a sprinkle of lime zest

Instructions:

  • Preheat oven to 400°F
  • Toss sweet potatoes with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper.
  • Spread on a parchment-lined sheet pan in a single layer.
  • Roast 25–30 minutes, flipping halfway, until caramelized and tender.
  • Drizzle with a little extra maple syrup or sprinkle lime zest before serving (optional).
