Easy Oven Omlette

2 Tbsp. butter
9 eggs
½ cup sour cream
½ cup milk
1 tsp. salt
1/8 tsp. basil
1 cup shredded cheese
Onion

Mix ingredients. Bake in an 8×8 dish at 350 degrees for 30-40 minutes.

Doritos Casserole

1 pound of ground beef
2 cans of chili without beans
16 ounces of sour cream
6 slices of American cheese
1 bag of Doritos, crushed

In a large skillet, brown ground chuck over medium heat. Drain. Add the chili and stir until heated through. Pour into a 9×13 or 10×10 inch casserole dish and cover with the sour cream. Lay cheese slices over the sour cream, top with the crushed Doritos. Bake at 350 degrees for 15 minutes or until he cheese melts. Serve with taco sauce. Serves 8

Crock Pot Pork Chops

Brown pork chops in skillet with a little oil. Sprinkle with salt and pepper while browning. Place in crock pot. Sauté onions and mushrooms in skillet with oil until tender. Place in crock pot on top of pork chops. Pour 1 to 1 ½ cups water into crock pot. Cook on high for 4 hours. Place on serving dish. To make sauce pour one can cream of mushroom soup into a sauce pan. Add enough water from crock pot to get desired thickness.

Chicken and Wild Rice Casserole

1 box. Uncle Ben’s Long Grain Wild Rice, cooked
2 Tbsp. butter
¼ cup Green pepper, diced
Celery
½ cup Green onions, diced
1 can cream of mushroom soup
2/3 cup milk
2 cups Chicken, cooked and chopped
1 cup grated cheddar cheese

Cook rice according to instructions on box. Cook and chop chicken. Sauté green peppers and onions in butter. Mix with all other ingredients and bake at 350 degrees for 30 minutes.

Chicken Enchiladas

2 cups sour cream
2 cans cream of mushroom soup
2 (4 oz.) cans diced green chilies
Chicken
Shredded Mexican blend cheese
Salt and pepper

Boil chicken and shred it. Mix with shredded cheese, salt and pepper. Mix sour cream, cream of mushroom soup, and chilies, set aside in separate bowl. Spread some sauce on bottom of baking dish. For enchiladas, spread some sauce on inside of each tortilla, add some chicken mixture, and roll up. Place enchiladas in pan. Top with remaining sauce and sprinkle some cheese on top. Bake, covered with foil at 350-375 degrees. Cook until heated through and bubbly. Remove foil for last 10 or 15 minutes.

Chicken Rolls

4 Boneless, skinless chicken breasts
1 tube Pillsbury crescent rolls
1 bunch Green onions
1 (8 oz.) package cream cheese, softened
¼ cup Milk
Salt & pepper
For gravy:
1 can cream of chicken soup & ½ can milk, salt & pepper

Preheat oven to 350 degrees. Cook chicken breasts and finely chop them; while cooking, chop green onions. Mix soft cream cheese, onions, milk and salt & pepper. Mix in chicken. Then, roll out 8 crescent rolls on floured surface. Add large scoop of chicken mixture to each roll, then fold edges of dough over mixture to cover it. Bake at 350 degrees for 25-30 minutes, or until rolls are light golden brown and crispy. While baking, make gravy. To make gravy, stir can of cream of chicken in with ½ can of milk and salt & pepper in sauce pan. Cook on low-medium heat, stirring often. (Really good with mashed potatoes, steamed broccoli, and fresh melon.) Serves 4-6 (makes 8 rolls).

Chicken and Broccoli Casserole

4-6 Boneless, skinless chicken breasts
1 (10 oz.) package. Chopped, frozen broccoli (thawed and drained)
2 cans Cream of chicken soup
1 cup Shredded cheese

Cook chicken breasts, and chop into bite sized pieces. Add chicken to broccoli and stir in soup (in a casserole dish). Top with cheese, and bake at 350 degrees for 30-40 minutes. (Really good with a fruit jell-o and warm rolls). Serves 4-6.

Aimee’s Breakfast Quiche

3 cups shredded hash browns
½ cup butter
(Mush and mold hash browns in the bottom of a pie plate then drizzle melted butter on top)
Bake @ 450 for 20 minutes

Add bits of Ham, mushrooms and 1cup of shredded cheddar over crust.( add yellow, red orange and green bell peppers bits for color). Mix 2 eggs, ½ cup milk, salt, and pepper, then pour over top and bake again for 25 minutes.

Bubble Pizza

1 Can of Pillsbury biscuits
1 ½ lb ground beef, browned and drained
Spaghetti sauce
Italian seasonings
Garlic

Cut biscuits up into pieces. Place in bottom of a greased baking pan. Cook ground beef and drain, add spaghetti sauce, Italian seasonings and garlic. Heat and let simmer for about 5 minutes. Pour meat sauce on top of biscuits. Cook on 400 degrees for about 15 to 20 minutes. Top with shredded cheese.

Pumpkin Bread


2/3 cup shortening
2 2/3 cup sugar
4 eggs
1 can pumpkin
2/3 cup water
3 1/3 cup plain flour
½ tsp. baking powder
2 tsp baking soda
1 ½ tsp. salt
1 tsp. cinnamon
1 tsp. cloves

Mix shortening, sugar, eggs, pumpkin, and water. In separate bowl mix remaining ingredients. Add together. Cook in 2 loaf pans at 350 degrees for 1 hour.

Homemade Granola Cereal

8 cups regular (not quick) oats
1 ¼ cups coconut
¾ cup brown sugar
1 cup wheat germ
Nuts (any kind you like, pecans, walnuts, almonds…)
Sunflower seeds
1 ½ tsp salt.
¾ cup vegetable oil
1/3 cup water
1 ½ tsp vanilla

Mix dry ingredients. Then mix oil, water, and vanilla in a separate bowl and then add to dry ingredients. Bake at 250 degrees for 45 minutes. Cool. Can add raisins or dates if desired after cereal has cooled.

Hoecakes

1 cup self-rising flour
1 cup self-rising cornmeal
2 eggs
1 Tbsp. sugar
¾ cup buttermilk
1/3 cup + 1 Tbsp. water
¼ cup vegetable oil

Mix ingredients. Heat oil for frying in a skillet. Drop about 2 Tbsp. batter per cake. Brown on each side.

German Pancakes with Buttermilk Syrup

For Pancakes:
6 eggs
2 c milk
¼ tsp salt
1 Tbsp sugar
2 c flour

For Syrup:
Buttermilk Syrup
1 stick butter
1 c sugar
½ c buttermilk
1 tsp karo-syrup
½ tsp baking soda.

Mix pancake ingredients well. Melt 2 Tbsp butter and pour into a 9 x 13 pan. Bake at 400 degrees for 20 minutes until sides are raised up and browned. For syrup, melt butter in saucepan, add other ingredients and boil together for 5 minutes. Remove from heat and add 1 tsp vanilla or flavoring of your preference.

Cranberry Nut Bread

3 cups all-purpose flour
1 cup sugar
1 Tbsp. baking powder
½ tsp. salt
¼ tsp. baking soda
2 tsp. finely shredded orange peel
1 egg, beaten
1 2/3 cup milk
¼ cup oil
1 cup chopped cranberries
½ cup nuts

Preheat oven to 350 degrees. Stir together flour, sugar, powder, salt, soda, and orange peel. In separate bowl mix egg, milk, and oil. Add to flour mixture. Add cranberries and nuts. Pour into a greased 9x5x3 loaf pan. Bake for 1 hour.

Dark Chocolate Granola Bars

¼ cup sugar
¼ cup maple syrup
¼ cup honey
2 Tbs. peanut butter
1 egg white
1 Tbs. milk
1 tsp. vanilla
1 cup whole wheat flour
½ tsp. baking soda
½ tsp cinnamon
¼ tsp allspice
2 cups regular oats
1 ½ cups rice cereal
Small package dark chocolate chips
Dried cranberries
Nuts

Mix sugar, maple syrup, honey, peanut butter, egg white, milk and vanilla. Add dry ingredients and mix well. Press into a 9×13 pan. Bake at 350 degrees for 18-20 minutes. Cool and then cut into bars.

Corn Light Bread

2 cups corn meal
½ cup sugar
½ cup flour
2 cups buttermilk
¼ cup shortening

Melt shortening in loaf pan. Mix other ingredients. Pour melted shortening into patter. Sprinkle pan with a little cornmeal and then heat in oven until pan is hot. Pour in batter. Bake at 350 degrees for 45-60 minutes.

Con’s Sticky Buns

Brown Sugar
Cinnamon
Pecans/Walnuts
Cream Cheese
Butter

Spray a round 8 inch pan with butter flavored Pam. Put chopped pecans/walnuts in bottom of pan Sprinkle with sugar and cinnamon Put 10 Pillsbury biscuits closely together on top and put a drop of cream cheese on top of each. Mix ½ cup brown sugar and ¼ to ½ cup melted butter. Pour on top. Bake as directed for biscuits on package.

Blueberry Muffins


2 cups plain flour
½ cup sugar
2 ¼ tsp. baking powder
1 tsp. salt
¼ tsp. baking soda
1 egg
1 cup melted butter
1 cup blueberries

Mix all ingredients, bake in muffin tins at 425 degrees for 20 minutes.

Blueberry Tea Cake

2 cups plain flour
2 tsp baking powder
½ tsp. salt
½ cup butter
¾ cup sugar
1 egg
1/2 cup milk
2 cups blueberries
Crumb topping:
½ cup sugar
¼ cup flour
½ tsp. cinnamon
¼ cup butter

cream butter and sugar, add egg, then milk. Stir in dry ingredients. Gently fold in blueberries (batter is thick, so i usually use frozen blueberries so that they don’t get so mashed up when i stir them in). For topping, cut dry ingredients into butter until crumble, sprinkle on top of batter.

Bake in a 8-9” round dish at 375 degrees for 40-45 minutes

Belgian Waffles

1 package dry yeast
2 cups lukewarm milk
4 eggs separated
2 ½ cups plain flour
½ tsp. salt
1 Tbsp. sugar
½ cup melted butter

Sprinkle yeast over warm milk. Stir to dissolve. Add beaten egg yolks and vanilla. Add remaining ingredients except for egg whites. Beat egg whites separately and fold into batter. Let batter stand in a warm place for about 45 minutes or until it doubles. Bake in a waffle maker. Can add any toppings desired.

Bran Muffins


1 ½ cups Kellogg All-Bran cereal
1 ¼ cups milk
1 egg
1/3 cup vegetable oil
1 ¼ cups flour plain
2 tsp baking powder
½ tsp salt
½ cup sugar

Mix cereal, milk, egg, and vegetable oil. Let stand 2 min. Add remaining ingredients. Cook at 400 degrees for 15 minutes. Makes 12 muffins.

Apple Muffins

2 cups sifted flour
3 tsp. baking powder
½ cup sugar
3 Tbsp. shortening
1 egg, beaten
1 cup milk
1 cup chopped, peeled apples, or 1 cup applesauce
1/3 cup brown sugar
1/3 cup chopped pecans
½ tsp. cinnamon

Sift flour, baking powder, and sugar together. Cut in shortening. Combine egg, milk, and apples. Add to flour mixture. Stir only until flour is dampened. Fill muffin tins 2/3 full. Combine brown sugar, nuts, and cinnamon. Sprinkle over batter. Bake at 400 degrees fro 25 minutes. Makes 12 muffins.

Pesto and Sundried Tomato Dip

In a dish layer one package cream cheese on bottom. Spread with any sun dried tomato pesto sauce. Cover with feta cheese. Bake at 325 degrees for 25 minutes. Serve with crackers or chips.

Party Meat Balls

2 lb. ground beef
1 cup sweet milk
3 tsp. salt
1 tsp. pepper
2 small onions, finely chopped
2 cups bread crumbs
Sauce:
3 ¾ cup Ketchup
9 Tbsp. dry onions
3 Tbsp. sugar
3 Tbsp. hot sauce

Mix first 6 ingredients together. Make into balls. Cook about 20 minutes, until brown. Let cool. Mix remaining ingredients for sauce and pour over meatballs. Cook on low for about 30 minutes.

Jalapeno Corn Dip

2 cans Mexi-corn drained
8 oz. sour cream
8 oz. Mayo
4 jalapeno peppers, diced
Pimentos
1 tsp. garlic powder
1 tsp. salt
8-12 oz. shredded cheese

Mix all ingredients. Keep refrigerated. You can use less mayo and sour cream if desired.

Ham Rolls

8 oz. cream cheese
½ cup sour cream
1 package dry ranch mix
1 package flour tortillas
Deli Ham

Mix cream cheese, sour cream, and ranch mix. Spread onto tortillas, place ham on top. Roll up and cut. Put in fridge for 1 hour.

Hot Artichoke Dip

1 cup Mayo
1 can artichokes, drained and chopped
1 cup parmesan cheese

Mix ingredients and bake at 350 degrees for 20-30 minutes.

Black Bean Salsa

1 can corn drained
1 can black eyed peas drained and rinsed (may substitute black beans)
2 chopped tomatoes
1/2 bunch cilantro
1 bunch chopped green onions
1 envelope Good Seasoning Italian Dressing (make according to directions on box)
2 chopped avocados

Mix everything together and serve with tortilla chips. Also great on chicken tacos.
